Linen Closet Disasters Averted!
Wash everything in the closet (it probably needs to be done anyway)
Toss out items that are holey (or cut them into usable rags)
Put together all your sheet sets into sets. Fold neatly. Pack the matching sheets in one of the matching pillow cases. Now all you see are neat stacks of pillow cases rather than loose sheets flying everywhere. They're really easy to take out - and you will never have to search for that lost pillow case. If you wish to keep them freshly scented, add in a dryer sheet in along with the sheets.
With the mismatched sets - donate them to the Salvation Army or local charity.
